Effects of Chia Seeds on Glycemic Variability and Satiety

New research from our team looked at the subjective hunger, fullness, and glycemic responses after consuming cookies containing varying amounts of chia seeds.

This trial was novel since it was one of the first chia trials in the scientific literature to properly control for energy with lower doses of chia, it used ground chia seeds incorporated into a cookie format, and it also examined glucose variability.

Glucose variability is emerging as an important endpoint for diabetes management. Fluctuations in glucose levels can cause oxidative stress. Minimizing glucose excursions may reduce diabetes complications. In this trial, our team found that cookies containing chia seeds significantly reduced glucose variability, which may provide health benefits.

“While we did not find significant effect on appetite or satiety, the effects on glucose variability were significant. I imagine that we will continue to see more research looking at glucose fluctuations and variability, as use of continuous glucose monitors and awareness of this endpoint increases,”
